About the event
Peru is one of the most biodiverse countries on Earth, with ecosystems that stretch from the cold Pacific waters to the soaring Andes and deep into the Amazon jungle. This natural abundance has shaped a cuisine unlike any other, layered, vibrant, and rooted in place. Peru boasts the greatest variety of seafood in the world, thousands of native potato and corn species, and a pantry rich with chilies, herbs, and tropical fruits.

Its culinary identity is equally shaped by history. Indigenous techniques meet Spanish, African, Chinese, Japanese, and Italian influences, each leaving a distinct mark; from wok-fired stir-fries to pasta-laced stews. The result is a cuisine of bold contrasts: coastal ceviches cured in citrus and chili, highland soups and stews, jungle herbs, and one of the world’s most diverse street food cultures.
